White Chocolate Cheesecake


This was my entry for the festive White Chocolate Cheesecake Competition held at work. The base is the usual plain digestive biscuit base, and the cheesecake itself is made from cream cheese, white chocolate, double cream, lemon juice, sugar and mascarpone cheese. The texture is softer than I prefer in a cheesecake, but it tasted damn good!

Pecan Ginger Cake With Lemon Cream Cheese Icing



Sunday mornings generally invovle watching Something For The Weekend followed by a spot of baking. Today I made a Pecan Ginger Cake with Lemon Cream Cheese Icing and decorated with caramelised pecans and spun sugar.

I've been meaning to make this Pecan Ginger Cake for a while now, and as the weather was rubbish I didn't feel like going out today, so I baked instead! This cake is studded throughout with plenty of chopped pecans and chopped cystallised ginger.
The original recipe involves using both muscovado sugar and golden syrup, but I omitted the muscovado sugar and just used golden syrup. Despite this, the cake is really sweet, so to cut through the sweetness, I decided to fill and ice the cake using a lemon cream cheese icing instead of the recommended meringue type icing.

Custard Buns


My poor little bread maker hasn't seen the light of day for about a year, so I thought I'd bake some bread this weekend.
These are freshly baked bread buns filled with a delicious creamy custard filling.

Plum and Apple Crumble



The thing I love best thing I love about crumbles is that they're fabulously easy and fabulously quick to make.
You can use whatever fruits are in season - I used apples and plums for an Autumn feel. To add a bit of crunch to the crumble topping, I added some finely chopped hazelnuts, but you could always use other nuts such as chopped walnuts or almonds. You could even add some porridge oats to the crumble topping for some extra fibre!

Birthday Cake


I made this cake earlier on this year for the Hunny's Mum's birthday. If my memory serves me correctly, it's a vanilla chiffon cake filled with lemon and coconut cream and decorated with fresh lychees, grapes, mangoes and apricots.

Cinnamon Nutella Cake



This is a really easy and simple cake to make. It's deliciously light and fluffy cake with a warm hint of cinnamon and big blogs of goeey Nutella dotted throughout the cake.
I think this cake tastes better warm and fresh out of the oven.

Strawberry & Pomegranate Chiffon Cake



This delicious cake is a vanilla chiffon cake filled with a strawberry and pomegranate mousse and decorated with freshly whippped cream and pomegranates.

I made this cake to celebrate mine and the Hunny's three year anniversary.
